Best Pumpkin Pie Recipe - Easy to make * Yum to eat*


Here is a recipe I created that was inspired by my grandmother for homeade pumpkin pie, This is always a huge hit in the fall for Our Oldest son's birthday its his special request and I have found through the years that even people who never liked pumpkin pie before are asking for second helpings and the recipe once they give it a try, This is very mild in flavor and just a super easy recipe, So if you want to impress your family and friends you should give this recipe a try. Every time I make this it gets rave reviews.


Susan Pittser's Pumpkin Pie Recipe
1 pack of Pillsbury Ready Roll out Pie crust
4 eggs
1 15oz can of 100% pure pumpkin
1 3/4 cup sugar
1/2 tsp salt
2 teaspoons of Cinnamon Or the Tupperware CINNAMON/VANILLA seasoning blend
2 cans of milnot Evaporated milk (12oz each) (pet milk, carnation evaporated milk or other brand will work)

You can choose to make either TWO 9 inch pies or One 9x13 cake pan with a larger pie for larger crowd, I make the 9X13 version alot and use my Tupperware Rectangular Cake Taker to transport it to potluck and get togethers. To make the cake pan size I just put two of the pie crusts together and shape the dough out to fit.

To make the filling
Beat Eggs, Add Sugar and Pumpkin and salt and mix together add cinnamon vanilla seasoning blend and then last add the milnot to the mixture then pour the filling into your pie crust and bake at 350 degrees for 50 to 60 minutes,

You can tell if the pie is done by piercing the center of pie with a butter knife, if it comes out clean the pie is done, if it doesn't come out clean then bake at 5 minute intervals and testing until done. Let Stand and Cool and Top each piece with Cool Whip if desired, Keep refrigerated when storing leftovers.

-The Best Carrot Cake- So Moist and Delicious with Cream Cheese Frosting

This recipe is so good it includes Pineapples and nuts and coconut and just is a really dreamy fruity carrot cake!
This cake always turns out Super Moist! This is a Great Cake Recipe to make for the holidays.

CARROT CAKE RECIPE
***********************************
2 cups flour
2 cups sugar
1/4 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons ground Cinnamon
3 eggs
1 1/2 cups vegetable oil
1 1/2 cups finely grated carrots
1 teaspoon vanilla extract
1 cup well drained crushed pineapple
1 cup shredded coconut



In a mixing bowl, combine dry ingredients. Add eggs,oil,carrots, and vanilla~ beat until combined. Stir in pineapple and coconut.
Pour into a greased 13x 9 pan.
Bake at 350* for 50-60 minutes or until cakes test done
Cool Before Frosting


CREAM CHEESE FROSTING
1 pack of cream cheese
3 cups powdered sugar
6 tablespoons butter
1 teaspoon vanilla

1/2 cup chopped pecans to sprinkle on top of
the frosting if desired.

Combine frosting ingredients in a small bowl;mix until well blended.
frost cooled cake. sprinkle with remaining nuts.
store in refrigerator.

The Best Flakiest Peanut Brittle ~Perfect Holiday Candy Recipe~


My mom has made the best Peanut Brittle for years with her recipe given to her by her Mother!
I remember her making batch after batch to give as Christmas Gifts.
This is so light and flaky and very Easy on the teeth peanut brittle!


3 cups Sugar
1 cup corn syrup
1/2 cup water
3 (Heaping) cups raw peanuts
1 teaspoon salt
2 teaspoons baking soda
3 tablespoons butter

DIRECTIONS
Prepare a buttered surface to pour your mixture out on to when complete

Boil Sugar, Syrup, and water until a thread spins...
You can check it by holding it over a plate or pan dip the spoon in and watch to see if the drops become like a thread..when it spins small threads from your spoon, then add the peanuts and
stir continuously and cook until the mixture becomes a gold color,
I normally do this by dabbing a tiny drop on something white (napkin, paper, plate etc) and then keep track as I go when I think it might be golden to check to see how it has progressed in the color.
when it is the golden color
Take off the stove and add butter salt and soda mixing quickly as it will begin to foam...pour onto a buttered board or surface and let cool
Break into pieces! YUM! Homemade peanut brittle!

White Icing for Decorating Cakes or Cookies

This Recipe turns out really white and good! You can of course add food color to tint it to whatever you want.

1 cup Crisco Shortening
1 lb of powdered Sugar
10 Tablespoons of milk
1/2 teaspoon Vanilla

Mix all ingredients together until the right consistency,
white it with an electric mixer,
you can add more milk if it is too thick or more powdered sugar
if you desire thicker frosting.

You can store this in the refrigerator for later use as well.

This is great to Decorate Holiday and Birthday Cakes or cookies or cupcakes

Instant Hot Cocoa Mix- Great for making Christmas and Holiday Gifts

sip a warm cup of hot chocolate with marshmallows with this homemade recipe for hot chocolate with mini marshmallows,
you can divide up and give as gifts with a soup mug or coffee mug for a great gift idea for teachers or bosses etc. This is a really great tasting recipe


INGREDIENTS
1 PKG (25 ounces) of Nonfat dry milk powder
1 1/2 cups non-dairy coffee creamer...(about 6 ounces)
3 cups (16 ounces) instant chocolate drink mix..like nestle quick
1 1/2 cups powdered sugar
1 1/2 cups miniature marshmallows

TO PREPARE
combine all ingredients and store in an airtight container.
This recipe makes 16 cups which is great for the Modular mate super oval
size 5 or the Super Cereal Storer.
or seperate into as many as 32 individual gifts!

you can then give a gift with a tag with the directions below

Directions
combine 1/2 cup of mix with 1 cup of boiling water

My Mom's Best Cranberry Salad *SO GOOD* not like regular cranberry sauce

This is very light and refreshing sweet and only slightly tart, not like the traditional cranberry sauce,
this is something Mom has always made on Thanksgiving and Christmas and at the holidays!
***WAY TOO GOOD***


2 cups RAW Chopped up Cranberries (you can use food processor-or I use my Tupperware quick chef to chop it up)
3 cups Miniature Marshmallows
3/4 cup Sugar

*Combine the first 3 ingredients & chill overnight


then the next day add
2 cups of diced unpeeled apples
1/2 cup sliced grapes
1/2 cup chopped pecans (you can leave this out if desired)
1/2 tsp salt
1 cup of whipped Cream (the small liquid whipping cream you can buy whipped)

add remaining ingredients except the whipped topping ~Mix well then FOLD In the Whipped Cream!

Delicious Orange Slice Cake-- Grandma Jewell Myers always fixed this at Christmas!



I remember so many times helping Grandma cut up the orange slices into tiny bits to make this delicious fruit cake type holiday cake, it is unlike any other fruitcake you have tried, no bitterness or aftertaste etc...only sweet yummy goodness!
This orange slice cake is the best moist cake and really pretty easy to make
it just is a long baking and the trickiest part seemed to be cutting up the orange slices into pea size bits! We would try with a knife or scissors for awhile and it would be so sticky you couldn't get it through the candy ***Talk about hand cramps***
So we figured out if we would dip our knife or scissor blades into flour or sugar first it would keep it from getting so messy and work the best! *if you try this recipe you will see what I mean!
The taste was so worth the efforts!!! YUM!
Oh the precious memories! This cake you can store for quite awhile and I think the longer it sets sometimes the moister it is so you don't have to worry about it spoiling quickly. Keep it in a cake taker and will last a really long time and stay super moist for the holidays!




1 lb orange slices (cut up into pea size pieces)
2 sticks butter
4 eggs
2 1/4 cups brown sugar
2 cups chopped pecans
2 1/4 cups flour

Melt Butter and let cool
Beat the eggs in a large mixing bowl,
add sugar, add butter, add flour, then
add orange slices and pecans

Bake at 250degrees for 2 hours and 45 minutes
these can be made in a bundt pan or a loaf pan

I recommend baking more than one at a time since
it is such a long baking time and
you can always eat one give the other as a gift

I recently made these in mini loaf pans each batter mix makes 4 minis
and I baked at 250degrees for 1hr 45 min

One of my funniest memories of this cake is when we first
got married the first Christmas I made one of these cakes to take
to my husbands grandmas house for the family get together.
There was just a few slices taken from the cake the last time
I looked and we were getting ready to leave so I told Byron's Grandma
to keep some for herself and here she came bringing me my empty cake taker!! LOL
that was so funny...she loved the cake and kept the whole thing!! I had expected to have some of the cake left to take home.....heehee
We still laugh about that, I was a little shocked with the totally empty cake taker!!! lol
needless to say it was a big hit and always is when I fix it.

The Best Cinnamon Rolls or Cinnamon Knots - this was given to me by Grandma Jewell Myers

these are the cinnamon rolls she would tie in knots, they are so delicious!
you can also roll this out like a regular recipe if you prefer but the cinnamon knots are really unique and taste wonderful for a great Dessert!
I remember helping Grandma make these cinnamon knots several times and
oh the smell in house when these were baking! These are excellent for the Holidays!

2 cups hot water
2 teaspoons Salt
1/2 cup sugar
3 Tablespoons Oil
mix in a bowl and cool til lukewarm
then add
1 pkg of yeast and stir in until dissolved

then add
2 beaten eggs
7 cups of flour

Stir in real good then knead on floured counter or board or
I use my Tupperware Pastry Sheet for this.

cover and let raise for 1 hour

then pinch off dough and roll and dip into
melted butter
1 stick melted butter or more if needed

then dip into the sugar and cinnamon mixture
1 cup sugar and
3 teaspoons cinnamon mixed well
and tie in a knot and place in greased pan

Let raise about 1 hour and bake at 350 degrees for 30 minutes

Ice the top when they come out of oven
with the powdered sugar glaze

Cinnamon Roll Glaze Recipe
3 cups Powdered Sugar
3 Tablespoons Milk
1/2 teaspoon vanilla (optional)

~* The Best Cheese Ball Recipe*~ Favorite & Always a Hit*

This cheese ball recipe was
Shared with me by my Aunt Almyra
about 18 years ago & our family really enjoys it

2 pkg 8oz cream cheese
1 small Can Crushed Pineapple (Drained)
2 Tablespoons finely Chopped Onion
2 Tablespoons finely Chopped Bell Pepper
1 Tablespoon Season Salt (you can add more or less to your taste)
1/2 to 1 cup of Chopped Pecans
save half of the pecans out to roll the cheese ball in

mix in a food processor or I use my Tupperware Quick Chef
add all ingredients (Except Pecans)
and mix until well blended then add half of the chopped pecans and
mix well, then roll into ball shape and roll in the other pecans.

Something I have added is I like to add 1/2 cup of shredded cheddar or the colby jack cheese to this as well and it turns out really good.

This is such a great holiday cheese ball!

* Chocolate Brownie Cake * always Moist and Delicious Super Easy Sheet Cake~!

This is a Great Chocolate Brownie like Cake for gatherings and bakes in only 20 minutes! You can make
the frosting while the cake is baking
Cake is Super Moist and has a fudgelike Frosting! YUMMY!



Bring These ingredients to a boil
& then take off heat and pour over dry flour mixture
1 cup shortening
1 stick butter
1 cup water
4 Tablespoons Cocoa

Have these ingredients put aside in a mixing bowl
2 cups Sugar
2 cups flour
1 teaspoon soda

mix hot mixture and flour mixture together it will be bubbly
then add
1/2 cup buttermilk
2 slightly beaten eggs
1 teaspoon vanilla

Pour into greased & Floured sheet pan
Jelly roll pan
and bake for 20 minutes at 400 degrees

CHOCOLATE PECAN ICING RECIPE
make this while the cake is baking

Bring these ingredients to a boil

1 stick butter
4 Tablespoons Cocoa
3 Tablespoons Milk

Then take off heat and add these items and mix well
1 lb Powdered sugar
1 cup chopped pecans
1 teaspoon vanilla

Mix well and pour over cake as soon as you remove it from the oven.
ENJOY!

This is a great dessert to serve

Aunt Cennie's Banana Cake-YUMMIEST BEST BANANA CAKE EVER!


1 -1/2 cup sugar
1/2 cup shortening (Crisco or other)
1 Tablespoon Oil (crisco or other vegetable oil)
2 eggs
2 cups Flour
1/2 teaspoon baking powder
3/4 teaspoon baking Soda
1/2 teaspoon Salt
1/2 cup buttermilk *just a note-if you don't have buttermilk you can use 1tblsp vinegar and then finish filling up your half cup with regular milk....or just use regular milk :)


1 cup mashed ripe bananas
1/2 teaspoon vanilla

Mix Sugar, shortening and oil together, then add eggs,
sift together flour and other dry ingredients and add part of the buttermilk, then dry ingredients to the sugar/shorening mixture,
alternating back and forth between dry ingredients and buttermilk until mixed well.
then add mashed bananas and vanilla

bake 35 minutes at 325degrees
You can bake this in a 9x13 pan or two square or round cake pans and then layer it,
once done
let set and cool before frosting.
You can Frost with a Cream Cheese or Coconut frosting
both recipes are below!
CREAM CHEESE FROSTING

YUMMY Coconut Topping for banana Cake

Boil these ingredients until thick
over low/medium heat stirring and watching closely so it doesn't scorch
1 cup sugar
1 stick butter
2 egg yolks
1 cup pet milk

once this is thick
add these ingredients and whip until cool
1 cup chopped pecans
1 cup coconut
1 tsp vanilla
