Oatmeal cake with broiled frosting- Deliciously moist & an amazing crispy almost candied topping

This was always a favorite that my Grandmother Jewell would make and always loved the crispy sweet unique frosting on this cake!

We would always start with  1cup to 1 1/2 cups of cooked oatmeal that was left over from breakfast

1 1/4 c water, boiling
1 c


oatmeal, old fashioned, uncooked
pour the boiling water over oats  & let set


1/2 c
butter

1 c sugar
1 c brown sugar, firmly packed
2 eggs
1 tsp vanilla
1 1/2 c all-purpose flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt



Mix ingredients well and bake at 350 for 30-40 minutes or until cake tests done

TOPPING
1/2 c butter

2 c coconut
1 c nuts (finely chopped)
Try
1 1/2 c  brown sugar, firmly packed

 8- 10 tablespoons evaporated milk



mixingredients well & put over hot cake and then put back in the oven under the broiler for approx3-5 minutes or until golden brown
watch very closely as this can progress quick and you don't want to burn it

Substitute for SWEETENED Condensed Milk in Recipe- LACTOSE FREE

Use this as a substitute for sweetened condensed milk
this is great when you are in the middle of a recipe
and realize you have forgotten this key
ingredient or find that you have an expired can.  Or for those looking for a lactose free substitute for Sweetened condensed milk

mix together

2 eggs
1 cup light brown sugar
1 teaspoon vanilla
2 Tablespoons Flour
1/2 teaspoon baking powder
1/4 teaspoon salt
