Homeade Vegetable Soup - Like Grandma and Mom!




Anytime we would have leftover pot roast this was always a favorite to make another dish,
I always wanted to help out in the kitchen and
even If I couldn't I observed as much as I could!!

here is how to make homeade vegetable soup or stew like Grandma and Mom did!




(you can also just cook up some of the stew meat covered with water for a few hours (with onion soup mix) til tender if you don't have leftovers to work with )

These are the ingredients I like to use in my soup but you can add or takeaway depending on the vegetables you like best.

Roast or Stew Meat
Chopped Carrots
Chopped Potatoes
1 pkg of small shell macaroni
1 bag frozen corn
1 bag frozen chopped okra (no batter on it) or whole baby okra
1 large can diced tomatos
2 large cans Tomato Sauce
salt and pepper to taste


Take chunks of your leftover roast beef and toss in a pan add water and bring to a boil, if you have extra stock from the roast use that too and just fill a big dutch oven about halfway full of water and boil away,

Chop up raw carrots and add to the boiling pot stir occasionally
to let them get a head start on the other since they take longer to cook
cook about 15 minutes then

Peel Potatoes and cut into chunks and add to the boiling
mixture, add the can of diced tomatos and add the frozen corn and okra
make sure pot is pretty full of liquid maybe 3/4 full in your pan.

Boil about 10 minutes then add the package of shell macaroni,
stir occasionally
cook about 6 to 8 minutes until pasta is tender

then when that is done add the 2 large cans of tomato sauce
turn heat to low and simmer for 5 minutes and
and let stand until serving

add salt and pepper to taste.

All of our children love this and its a great to get them to eat their vegetables
